Calcium hydroxide Ca(OH)2, also called slaked lime, is a strong base that can be used to increase mash pH.[1]

Generally, sodium bicarbonate (baking soda) is preferred for the purpose of pH adjustment because it is less hazardous and equally effective.[1]
